Thursday: Laiki



Thursday morning is the weekly farmers' market -- laiki -- in Neapolis. We walked to the market from the Limira Mare with Virginia Kouronaiou, who selected the ingredients for our lunch. We took advantage of the opportunity to look around and buy a few things ourselves.

At Virginia's house in Mesochori, she demonstrated how to make her special version of briam (a baked vegetable dish), marinate and bake gavros (small popular fish) and create the popular green bean salad.



While lunch was in the oven, Sandy taught us the technique of glazing, which she calls the "art of not mixing." After class, we cleared the table and ate lunch al fresco under the pergola.
